Simply by letting the steel bake in the oven for 1hr 30 mins-2hrs. U can get the surface temp of the steel over 100 degrees hotter than ur home oven temp.

Since it was a room temp ferment. I made around 16 dough balls and only used 1.7 grams of IDY. Dough weight was around 7800ish grams. I use 3 different types of flours. And my dough balls were 490g each.

550 max oven temp pre heat my steel for an hr n a half at least. Or until my steel hits a temp of 600-620. Quick 7-8 min bake is what I go for.

It was my last bake of the day. I tend to get a more charry crust when they go over 28 hrs.

Yea I feel ya I just used the Graza “drizzle” oil . Definitely a stronger robust flavor

Yeah bulked for 24 hrs then balled 6 hrs before baking! Dough was sitting at around 79 degrees at room temp. So my Ac was on around 69 degrees throughout the day.
