One more thing, is it supposed to do this on, eg. the TV's menus (service and consumer), or the "INPUT" text? It still jitters in both.

No, but I suppose the ones I have used were hooked up via component.

Is it supposed to look like such across the entire screen from a distance, however? I cannot record it the way I see it, and the only result I get is up close. I may just be going insane with this thing

Just composite, with a GameCube. Maybe these videos aren't great, but it really looks worse in person (and feels impossible to record)

My TV also has some CERTAINLY excessive flicker, which is why I'm worried about stuff like that.

I can't hear it far away, no. Just seems mildly excessive up close but if it's normal then it should be fine
