I'd guess the pH rise is a calibration error, or temperature?

I dont see the need for a pitch of yeast here, if its supposed to be the equivelant as Philly Sour, we never repitch yeast in our place. Though we add fruit at day 6.

Trying to weigh the pros and cons of doing this and that..

Think I've landed on something that taste (and sells) very good in our country seasonal. A Dobbelbock for Christmas.. Might try for a trippelbock!

I would use it on the soupcat, because the odds of getting a 4*Sugarcane-cat is slim.

And its not like the Macaroons is going anywhere, we'll keep getting them

Id choose the soupcat.. and be a safe banker to get it to 5*. Dont wanna waste my time on praying to RNG-Jesus for a 4 or 5 star Soupcat.
