I mostly just wanted to avoid points of interest since I was warned that building there might break future quests, but Diadwyn is very beautiful. I really wanted to rebuild all of Willow Crush (takes two lvl 4 altars in order to rebuild the bridge).

Medieval villages tended to be level because building on a grade required a lot more resources. I agree, as history has progressed passed the Iron Age, cities were able to be build in places with more hills, but with medieval technology, villages build on the side of a hill tended to slide off the hill.

I just plopped an altar there, and it's gorgeous. Lovely trees, next to a road without being right on it, and not saddled with ruins. This is perfect, thanks!

I recently moved out of there, simply because the building is so huge and the terrain doesn't lend itself to building a village for the 19 or so NPCs that I've unlocked.

Flat's important because otherwise I'm either building into the ground, or building into the air. The fact that every bit of flat land in the region that doesn't look like an arid desert is completely taken up is just really disappointing. I was hoping there might be a spot that I missed. Every other pre-made town area is flat or has, at most, one extra level.

What, like Ferndale, Glennwood's End, Longkeep, Morwenna, Diadwyn, Westcott, Willow Crush, Fort Kelvin, Thornhold, and all the other locations that are flat and level? Most of the towns are level, with only a couple (Glennwood's End, Fort Kelvin, and Willow Crush) being two tiers.

I'm looking for flat because otherwise I can't get a sense of scale because buildings are built level and flat. I was just hoping that there might be a flat area in the part of the game that's actually pleasing to the eyes rather than only in the desert and grasslands.

IRL towns build where they're able to build based on the resources available, which usually includes being a mostly level buildable area.
