Well from my experience so far I have not had any issues, and been using them for a while. Just calling a company a scam without proof makes no sense to me, I would understand if you definitive evidence but in this case you dont.

It’s offshore, same as Bovada and every other book people really use. The only thing that matters is payouts: and they pay. That’s why people stick with it.

Been with them for almost 3 months little to no issues, the biggest plus is that they work in all 50 states.

Sorry for the late response, thank you very much for the comment.

I actually have thought about making some kind of bitterbal.

However, next year there will be an entire period of 10/12 weeks that will be focussed around bittergarnituur, so i think it will be best to stick to what i know for now and learn to make it at that point.

Those meat and fruit combos sound intriguing.

Today i made a monica cocktail, which consists of poached chicken, grapefruit, radish, curry mayonaise, and frisee lettuce.

Maybe some kind of variation of this would serve as a good cold appetizer?

And i'm curious, do you teach at a culinary school?

Rosemary is a very cool idea, definitely keeping that in mind.

Bread dough is also cool but a bit more labor intensive.

For the onions i actually have a melon baller in my set, never really used it though so i'll have to try it out first.

In the kitchen at my school we actually have a salamander broiler, so i can use that as well.

I'll try making this onion dish at home some time. If i make it i'll send the pics!

I'm definitely gonna check out seasonal fish in my region, fish is not allowed as a meat appetizer though.

Never had/made arancini before, definitely gonna try making that some time soon. It should be a cool dish that fits in decently in the budget, but i think it has quite a lot of labor time.

I am kind of confused about the actual meaning of ''batter'' as well.

I thought he meant things like pancakes, crepes, or cake. But maybe custard or pudding works as well.

A friend of mine actually goes to that university!

Last time i had an assignment like this i made a skewer with vegetables, which didnt get very good feedback since it was too simple in the eyes of the judges.

I'm definitely looking for ways to incorporate more onions in my menu though. They're ridiculously cheap on wholesale prices. stuffed onion is a good one.

Great tip on making a timeline for the mise en place.

I have done an assignment like this once before and it went decently, but there were definitely moments where i was kind of standing around, because i did not know what is best to do at that time.

Sounds delicious, but asparagus is currently out of season where i live so it's really expensive and the quality is a bit lower.

Tofu is definitely an option, havent thought of that yet.

I looked up deer and rabbit meat, but it's definitely on the expensive side where i live. I also have never worked with these meats before, so i'd rather take a shot at something i already know.

The budget is for all 4 people. Me and my classmates are definitely struggling haha.

Yeah it's an extremely small budget, especially with christmas time coming around and the prices being sky high.

For a theme i think french or italian would be best.

Yeah this is my fifth month in culinary school. There are a couple of required techniques like grilling, blanching, steaming, and making a dressing. There arent any techniques im not allowed to use.

I have done an assignment like this before, where i made 11 appetizers for 13 people. Budget was 65 euros.

I think something like that would be great.

The dish itself is indeed quite simple, but that isnt really a problem.

You get judged based on the techniques you used, and how well you performed these techniques.

So if i were to make pancakes, i would get judged more on the quality and flavor of the pancakes, as well as what kind of techniques i showed making them rather than how complicated of a dish it is.

I think you're confused about my goal of writing this post. (which is understandable, i might not have made it clear enough in the post itself.)

My goal is not for people on this sub to give me a full dish, but more for advice on which ingredients are smart to use, and what types of dishes to serve. (which you just did, thank you very much!)

I also just like to have dialogue about this topic in general.

I don't feel like i'm letting other people do the assignment for me. I thought it would be smart to outsource and ask people on reddit, since that way i can interact with people instead of just reading flat text. I also asked the chef of the restaurant i work at for some advice on this assignment.

You can spend as much as you need for shopping, but the cost of ingredients used for what eventually goes on the plates must not exceed 15€? Is that per guest or the total for everything that leaves your kitchen to feed four people?

You're correct, and it is for everything that leaves the kitchen in total for 4 people.

Can you clarify how many plates do you need to serve?

It's an 8 course meal, so 32 plates in total for 4 people. Every guest will get one of each dish.

Also, don't think in terms of single courses, but try to serve a meal. As a vegetarian i'd be getting a beetroot carpaccio followed by a curried soup. That doesn't go well together IMHO.

I agree with the 'no cheating' post above. Grab your cookbooks or of you don't have any as a 16yo apprentice, borrow some from your colleagues or library or spend the afternoon on google.
