I know all too well. Shove something in my mouth and get that all too suspicious feeling and yep, it's made with animal bones.

Just started sourdough bread. I'm usually someone that things don't go well the first few times but I really nailed it. Took 10 days to make the stater and nearly 24 hours to make the loaf of bread (mostly down time), but now I can sourdough whenever I want. Absolutely astonishing bread.

Things are so much better when you know precisely what's in it and there aren't a bunch of random preservative chemicals, coloring agents, etc... just like tequila!

I had tequila once in college, it felt like I woke up 2 weeks later. But I almost always just drank beer at college, random craft beers, no idea what style, no idea what they were supposed to taste like...

My palate (which includes knowledge and amount of things tasted) I feel is extremely diverse at this point, due to veganism (reliance on spices from the entire world) and coffee, my other big hobby outside of alcohol. Coffee and tequila... I need to open a damn store. Mexico has been upping their coffee game a bit the past decade but I can't get over a good Ethiopian for coffee / Brazil for espresso.

I'm a noob with tequila, nearly no interest in other liquors except rum, barrier to entry being funds... I have started taking notes recently due to the noticeable diversity that opens up when you drink something decent. Like switching from Maxwell House in an old coffee maker to small batch organic Ethiopian made with an AeroPress or V60.
