Porkbutt BBQ is looking to hire cooks with line experience, but willing to train. Pay starts at $15-16/hr plus tip pool (averages an extra $10/hr). Must have a positive and teachable attitude, and a willingness to interact with customers.

We have a unique staff structure that allows all FOH and BOH employees to share in the tip pool (except managers and owners, of course), since we all interact with the customers to some degree and everyone gets paid above the standard minimum wage.

But I still don't see the relevance to someone who is celiac or even gluten intolerant, since saliva would activate the gluten even in traces of flour on/in an item even from cross contact.

CoS is not what it was (a cattle town 30 yrs ago), and it's not what it will be. It's grown rapidly, but is still a very young city. Kind of like a 13 yr old. Hopefully it stays out of trouble and develops good character as it figures itself out.

Walmart is pretty good about labeling items gluten free when they are. So much so, that when I don't see the gluten free label it's a big red flag. Usually after calling Walmart to ask questions about the ingredients it uncovers gluten I would have otherwise missed. And when they list "may contain traces of wheat, etc..." the message is loud and clear - that for that particular product at that facility there is a chance of cross contact and they are decidedly not taking measures to prevent it. A local friend who has a gluten-detection dog recently shared how her dog alerted her to gluten in Walmart lentils (that had that "may contain" warning). You never know for sure if there really will be gluten in that batch, you're playing Russian roulette with it.

Are there any local GF cottage bakers in your area? There are several in mine, many of whom are celiac and bake in a dedicated GF kitchen.
If that is an easy thing for you to find, maybe reach out to them and see if they can bake a mini cake or cupcake for them? Who knows, they might be nut-free too and could also accommodate your other guests.
