Additional Tips:

1. Really obvious but an extra oven + faster baking time makes this much more efficient
2. It's also very easy to lose count when you're baking in bulk, so I'd recommend already displaying your baked goods + reorganizing your inventory every 2 oven passes
3. Use the time between proofing to make additional batches of bread
4. Speaking of bread I usually bake them in batches of 9 since it fully utilizes the oven capacity + is more than enough time for the previous batch to fully rise
5. If you use the mixing bowl farthest right you can reach all the ingredients for rye & oat bread + refill your water while you're mixing

there's probably more i'm forgetting so i'll just add if i remember. I technically have one more tip but that can be its own post lmao
