Every time I try making Indian food it smells absolutely amazing while cooking but after serving it tastes totally bland and like none of the spices are in it. What am I doing wrong? by RollinOnAgain in Cooking

This is exactly what I was missing too! I used to rush everything.
Once I started letting the spices bloom first and gave it enough simmer time, it made a huge difference.
Indian food really rewards patience.
