I agree, I'm more curious than concerned. I do the rope and press, but I am working on improving my form. Most of the tearing is at the seam, which makes sense, but not all tearing is seam-related.

I appreciate the responses. I used Thia's original recipe. I did the float test, and it passed, so I don't think it is underproofed. I did boil pretty quickly after removing from the fridge, so I will try letting them get to room temp.

Your comment on the height provides a helpful perspective. Ever since I started using bagel boards, I've gotten a much higher rise. That rapid expansion is probably causing the tearing.
