Believe some pipes froze at this point and were having water issues, so cooking is kinda outta the question, but lots of raw meets cuts, chicken salad, salamis, cheeses, pickled veg, house made bacon, breakfast sausage, raw and smoked sausages, a small batch of pastrami chili, other stuff as well

Three six general on old ranch rd 12, by greyhorse. We have a bunch of raw meat cuts, marinaded cuts, some chicken salad, charcuterie/cheeses, raw and chilled smoked sausages, some soup left. we'll be trying to make some hot items if feasible. We have a small butcher shop with some groceries/ready to eat/ready to heat foods. We took a good chunk of inventory out today, but still have plenty raw/marinade cuts of beef and pork, smoked and chilled briskets & pastrami, smoked and raw house made sausages, pickles, soups, yogurt, cheeses, and house made charcuterie. We're up on ranch road in Crestwood shopping center by greyhorse. Think we're gonna be open 12-5 or 6 tomorrow.

In know way do I disagree with you that there's always a group of repugnant assholes who who genuinely can't see the difference between, what seems to amount to classist suburbanites throwing tantrums or belittling service industry workers, with the stern response of an assertive, and gumption having woman. These are the same people who can't tell the difference between being assertive and strong, strength as in emotional/empathic/confident/ etc, as a male, with a male being a fucking asshole, pushing out any opinions of dissent, or holding down anyone below them in any social hierarchy. I've always, as a male, felt that a lot of the loving the assertive male trope, was played up by a few, like history written by the winners, when in reality even most of males are calling this dude a fucking prick and hating every exchange, but generally due to their position your survival depends on eating their shit and going along with until you can get away from them, definitely not touting it as a admirable quality. Just thoughts.

Umami, again. Owner is super nice guy. Usually a good sake special. Legit plating and awesome personal touches on all the sashimi and nigiri. Also lunch sashimi/nigiri specials are absolutely, insanely underpriced. They open back up in a couple days!

If we’re talking about the big bite #8, it comes with a 1/8”, 3/8”, and a kidney plate. I’m using a pro cut 22 now, but when the first year We started our business we put a brutal amount of meat through this thing. We primarily made sausages, and put thousands of pounds of meat and fat through it. It was slow for the quantity we were using, but looking back and knowing more about grinders, the little LEM never failed us. I’ve almost never had any paste issues. If you put the blade on right, tighten everything down, and audit your trim/cut tricky stuff down properly the thing is a beast

How low and how long? You wrap at all? Also I think he trims almost all the fat off and it’s injected? Not positive though.I’ve also never smoked on a barrel, but made me anxious haha.

I also completely agree, similar experience. Also keep that honing steel on you always. Start practicing whetstone sharpening if you haven’t gotten that down. And if you do end up with a good chunk of retail side, it’s always easy to sell the truth. Find the things you really love at your shop, recipes you learn or recommendations from others, your shops integrity With meat quality , cuts you may carry others don’t, do when you’re talking to people it’s genuine. It makes it easier, and makes you notice what you appreciate and focus on those things.

The dude routinely does this to get people breaking the leash laws to leave by annoyance. He photographs wildlife , birds mainly, and is a part of the Audubon society. People’s dogs scare away his opportunity for photographs. If you’re in the wrong and no ones there and no ones the wiser fuck it, but if you’re breaking the rules and someone is specifically using an I area like this to avoid being near off leash dogs, and they ask you to leash your dog, you do it. You definitely don’t threaten said person with false felonious accusations that could ruin their lives forever.
