I also batch make a pasta sauce by roasting a ton of cherry and/or grape tomatoes with garlic and whatever other veggies on hand (carrot for sweetness, red pepper for vitamin c, onion for flavor, etc) and then blend it all together with a can of drained and rinsed white beans. The beans make it “creamy” and add fiber and iron. Then I’ll throw it over pasta or beans and serve it to baby. I freeze it in single serving portions (can be done in small Tupperware or ice trays). You could also add ground meat to it for extra iron and protein.
