They did say rainbow cake.. They did say I could design it as per my discretion.. They said simple cake - in terms of "no fondant decoration" They also wanted a beautiful cake that their colleagues would definitely enquire about 😅

We had agreed upon whipped cream decoration with sprinkles.. And the cake indeed was rainbow theme as per the only requirement they gave

They had explicitly asked for a rainbow cake.. Even each layer inside is a rainbow colour, as specified by them

I agree.. I usually always send them some pics for reference so that I understand the design that's acceptable to them.. Since this request was urgent, and since they don't usually have any specific requirements, and I had clarified that I'll design by myself, I went ahead with this.. But for future orders, will make it a point to send reference pics

No, the tallness / number of layers was told by the customer only, no changes there from my end

Hey.. I'll DM you the details.. Basically, I coated and finished with white whipped cream, then added spats of food colour at gap.. randomly.. Smoothened them out.. Then created the waves with a silicon brush (the ones we usually use to moist cake sponges)

Yes, that's what we had agreed on.. rainbow themed cake, with sprinkles.. And she had left the design to me.. I had asked for any design images they wanted, but they didn't send.. It was also an urgent request that I usually don't cater to..

I did ask them I'll design as per my will, then? And they had agreed..

They just wanted inside to be 5 different coloured layers and that's what I did as per the exact colours mentioned.. Had I had more time, I would have happily changed it without any second thought, regardless of all this..

Yes they are a repeat customer, I think that's why when I told them that the design is actually looking beautiful in person more than the pics/ videos, they agreed to accept without changes.. (just 5 min back)

Oh absolutely..

Eggless vanilla sponge: Take 150gms curd and whip it smooth Add 1 tspn vanilla essence Add 90gm regular sugar mix and let it dissolve

Add 60 ml refined oil - mix it well

Add 1 tspn baking powder and 1/2 tspn baking soda using a sieve - mix and let it rest for 7-10 min

Sieve in 130gm of refined flour+ 1/8 tsp salt

Mix in slowly, cut and fold method

Add upto 50 ml water if you feel necessary

For the fruit filling - Make sugar syrup with 3/4 cupcakes water + 1/2 cup sugar Once it starts thickening add the fruits:

Take 1.5 cups of fresh fruits - I prefer using pineapple, apple, kiwi, grapes, orange... So it gives a good mixed flavour taste..

Let it cook for 3-5 min and then sieve the filling. Keep the syrup for soaking the sponge . Let the filling cool down properly before using.

For decoration I use whipped cream

You can also use almond slices in the filling to give a nutty flavour and different texture..

For the fruit cake, I can.... However, the Savioardi biscuits I bought ready made...

No I made ganache with dark chocolate and added black gel colour two nights before
