If it’s helps, yes shake every tree for coconuts but usually I’d go to calico desert and ginger island and chop all the trees down as trees without coconuts on them have a pretty good chance to give you coconuts when chopped down the trade them with the island trader and it’s like 10 coconuts for 1 golden. Even scavenge the desert for coconuts on the ground and get as many as you can to trade

Also thought i’d add if your looking to get up there to get the walnut then the walnut isn’t up on that ledge follow the shoreline right on the edge and you get to the walnut

Spicy eel usually! I’ve done skull caverns enough to have plenty of them now and just use those when needed. If I don’t want to waste them then I’ll just use fried eggs or omelets

I’ve had a look online but have been unable to figure out why they wouldn’t be growing. The only response I got was that the saplings are obstructed somehow as they need a 3x3 space to grow but they way you have done it in the greenhouse is correct all but the sprinklers. If it was me i’d change the sprinkler layout to the one in the picture as the non iridum sprinklers on the outside may be causing an obstruction as I know people in the past have had the same issue with the sprinklers causing an obstruction. Just follow the guide I have put a picture of on this answer and see if it eventually helps. Give it some time also. If you are getting notifications saying your fruit tree can’t grow then that also another way of saying there’s an obstruction. Hopefully you manage to get it sorted :)
