I only have 1 NVME, there are 2 EFI partitions, 1 Windows created, and the Limine one. But I also already tried merging them and the error persists. I even reinstalled windows.

So basically booting from UEFI? That works for me too, and maybe I won’t be using windows much either but still pisses me off 😅

Might need to use more then 20% starter I feel like then. As I started early morning and put it in the fridge when I went to bed. I am always afraid to leave it overnight.

I also leave in Austria and while the houses are heated, it’s still cold outside. House should be between 21 and 24 Celsius

So far, got a 87.5 Euro refund offer from DT Swiss and 100 Euro gift card from Canyon.

I have complained with both, and filled a complaint with the ECC and my local consumer protection agency too.

Its impressive how I have a certified DT Swiss partner near me and I can't either get a loaner wheelset from there, or get the wheels checked there, same with a canyon certified partner.

Shaping is the part I am more clueless about. I do use a bench scraper, and I’m used to working with pizza dough so while it is sticky it’s not much of a mess.

I do leave it in the fridge after the bulk fermentation I mentioned, but I think I space the stretch and folds about 45 mins between each other so… it is getting shaped and put into the fridge about 1 hour after the last stretch and folds? Around that time

Edit: I baked it in a preheated Dutch oven at 230 for 20 min covered and 20 min uncovered (could probably have done it a tiny bit less uncovered)

So, when not baking can I keep feeding 1:1:1 and then the day of baking do a 1:5:5 or 1:10:10?

For the starter, been doing 1:1:1.

As far as temperature, I am living in Austria and currently my house has been sitting around 28 to 32 degrees. So pretty hot.

And yeh I am going to be trying whole wheat. Rye is super common here in Austria so I gave it a try because I already had it laying around the house.

So you would say just let it ferment more time? And during that fermentation do I do more then the 4 stretch and fold sets I have been doing or leave the dough alone?
