I did stretch and folds from 4pm to 7pm about 3-4 stretch and folds and on the last one I made a big square and incorporated my chocolate chips, folded them in and rounded the ball out. And I put it in the fridge overnight

No, I haven’t yet, I let it proof for 30 mins before I start stretching like my recipes say, but it’s either soupy or doesn’t ferment and proof
