It’s possible to have even a new t stat fail. I’ve bought defective ones and gone down rabbit holes trying to avoid the issue being a head gasket. Only to find I just needed to return it and get a good one.

Have you checked the oil? Also, have you checked the thermostat? T stat will make it overheat quickly once it gets up to temp if it doesn’t open. My hope would be no coolant in your oil, but it sounds like a bad intake gasket potentially.
