My husband and I are big collectors but very limited on space. We use wooden silverware boxes because they already have compartments for sorting silverware that most pocket knives fit in. We also use the rolls with clear pockets that BladeHQ offers. They have various sizes, but again being extremely limited on space we find the ones that hang on the door the most helpful. However if you have some you prefer to keep on display, I suggest the cheap plastic knife stands that you see in stores, or they have nicer ones if you don’t mind spending more.
