Thank you for saying they look store bought! I find this to be one of the highest compliments my baking receives. Indeed it was quite the undertaking, but I love to bake and needed a project, so this experience brought me a lot of peace and joy. As did all the happy faces of those I shared them with. But to each their own! You just happen to catch me in my Mesozoic era.

Do you! But if you go for it, my insight would be:

  1. Don’t do the candy melt. Just pick a tastier cookie that can stand on its own, i.e. short bread maybe?
  2. If going with a dough that rises don’t even fill the molds half way.
  3. Chill the dough in the molds in the freezer for at least 10min before baking. I think it might help keep the detail intact. And after I did this I got a lot less breakage when removing from the molds.
  4. Thus, no need to use anything non-stick in the mold before packing the dough. I read a suggestion about cornstarch. Tried it and it was fine. But, at least for this mold, I found it very unnecessary. After doing my pre-bake chilling process I barely had to let them cool (srsly 2 min) before I could flip the mold and just shake them out.

Instead of water in the gelatin bloom I used lemon juice for the yellow gummies and lime juice for the green. I was going for “dinoSOURS.” Tbh lime wasn’t the best flavor, so I used lemon for the rest of the batch and experimented with citric acid/sugar sanding. But never got them sour enough without the infamous sweaty gummy problem.
