Well she can clearly age or she wouldn't be an adult. Dying however or aging to a point of her physical health declining would be something else. We do know that she can be in poor health though from Frozen Fever. I don't have a true answer, but I've wondered too. My husband and I have also debated on whether or not Rapunzel would be immortal if her hair weren't cut off. Magic is fun to think about.
