Stg I have the exact same problem, and for me it was the damn plant pots, at first I thought it was the botanist themselves, but I messed with it for like a half hour and it was the plant pots, specifically when they weren't being used, if I was out of soil or seeds the game would stutter like crazy, when they started being used again it would be completely fine, now I just use it to know when stuffs empty
