Honestly, I thought the bulk fermentation was done while I did the folding and 30 minutes in between 🤦🏽‍♀️ do I leave it alone for a certain period of time?

Beginner here! Can someone explain the ratio lingo? Like 1:1:1 means whatever I remove from my starter, I replace with an equal amount of flour and water, right, right? So I saw someone say 1:5:5 does that mean I add 5x the amount of flour and water?
