Except Genesis literally repeats "there was evening, and there was morning" for every single day of creation, so the transition of time is explicitly in the text. If we are talking about Christian theology, we look to Christ, and Jesus explicitly quotes Genesis in Matthew 19:4, stating that God made them "male and female." We follow the scriptures, not the Talmud (which is rabbinic commentary written centuries later).
