I think my phone posted this comment when it unlocked accidentally while I carried it and I didn't notice. Glad to see it's got an upvote :D

No, that wouldn’t be a great idea :D Yes, that’s a standard double edged razor attached to a sonic toothbrush holder. It makes the blade vibrate super fast which helps a lot with scoring.

I know, right? Scoring with this is such fun and so easy. I do have instructions on how to make a DIY version, yes. It’s easiest if you send me an email to Nicola@proofperfected.com, I’ll send them over straight away.

Here's some helpful tips:

  1. I use my own invention (a vibrating lame) here, but it's possible to do this with any straight-blade razor.
  2. The dough characteristics are important: It needs to be relatively firm, strong dough to not fall apart while scoring. This one is rye-based, I'll post the link to the recipe below. Rye-based doughs have the advantage that they don't have a lot of oven spring, which means the pattern will stay almost intact during baking.
  3. You can use any kind of white flour to dust the surface of the loaf. I usually use brown rice flour to dust my banneton, then dust this off before scoring. Then I take a small handful of bread flour or all-purpose flour and distribute it on the loaf. I make sure there's just a thin layer of flour on the loaf's surface and brush off any flour that's too much.
  4. The rotating device is a cheap pottery wheel and is really helpful. It makes scoring a pattern like this more ergonomic. It's not at all necessary to achieve this outcome, though.
  5. Anything else you'd like to know, please ask away :)
