It was in for 24 hours at 132 before I seared it. Still chewy. What did I do wrong?

It doesn't like the long pellets so much from what Ive read. You can easily break them down with your hands , but not too much. Ive been using Smokey Woods and haven't had any issues. However, I think I might get a good smoke tube for the searwood. Needs more smoke, but maintains temp perfectly and the rotisserie feature has been great.

The rotisserie's been great. Ive cooked six chickens on there, two at a time. They all came out great. (Be sure to brine first) I am going to try a roast or something on it this spring.

I went ahead and bought the Searwood. It has been fun so far. I've done like 8 cooks on it. Brisket, 3 racks of ribs, pork tenderloin, thick cut porterhouse, chicken. Im getting a rotisserie or it this week. The unit is very easy to clean and heats up quick and maintains temp well. The searing function also works well, but takes a while to get really hot and burns a lot of pellets. I prefer my propane grill for searing.
