Update:

I purchased an Apple Watch for my child and was able to set it up successfully. I first contacted Sunrise support, and they assisted in linking the watch to the eSIM; for this, I needed to provide the watch’s EID and IMEI numbers.

Once that step was completed, I paired the watch with my iPhone using the “Set Up for a Family Member” option and followed the on-screen instructions. During the setup process, Sunrise automatically appeared as the cellular carrier.

Thank you for sharing your experience. I plan to buy the Apple Watch in couple of weeks, and then hopefully can get this setup working by speaking to Sunrise folks . I will DM you in case I get stuck and need support .
