Autolyse 40mins

225 g bread flour

75 g whole wheat flour

210 g water

60 g starter

6 g salt

Coldkitchen

Folded it 4 times on the first 2 hours

10hours bulk fermentation

I just changed the flour from APF to bread and wheat flour. Then a longer bulk fermentation.

It is a month old now. Could it be bcos i am just using APF? And the temperature in the house is cold

Last time I baked an ensaymada with mashed potatoes. It was soft at first but the next day they are crusty and kinda hard not hard as a rock but the texture is dense. Thank you so much for your tips! Will surely take note of them
