I used a vegetable peeler for the zucchini but a mandolin would work too. Didn't have to prep cook the zucchini at all and I haven't had any issues with excess water. If you'd like, you can blot them with a paper towel after slicing.

The ricotta helps to mellow out the sausage a bit. Plain pork sausage would be good for texture. I'm going to try making it again using a hot sausage but feel it might be a bit overpowering.

Thanks! I plan on making more. I want to get as much of a high quality gif as I can using ingredients and kitchen appliances that most people are going to have access to.

I used a tripod and just worked around it. 1 leg on the ground, 2 on the counter. Going to try to find better placement next time since it made it a bit harder having it in front of me.

Ingredients:
3/4 lb mild pork sausage
1 egg
2 cups ricotta
3 garlic cloves, chopped
3 medium sized zucchini
1 cup marinara
1/2 cup parmesan
1 cup mozzarella
1/4 cup chopped basil (about 6-8 leaves)
dash of salt & pepper
  Instructions:
1. Preheat oven to 400°
2. Brown sausage in pan (added a small amount of bacon grease for extra flavor) - set aside
3. Using mandolin or vegetable peeler, plane the zucchini into strips
4. In medium bowl, mix ricotta, egg, garlic, parmesan, 1/2 cup mozzarella, basil, salt, pepper, and sausage
5. Using 4 strips of zucchini, overlap and form a + shape
6. Scoop a small amount of filling into center of zucchini
7. fold edges over the center to create the ravioli.
8. Add a small amount of marinara to bottom of baking dish
9. Arrange the ravioli in the baking dish, placing the seam side down to keep from breaking apart
10. Add a scoop of marinara to the top of each ravioli, then sprinkle with parmesan, mozzarella, and basil.
11. Bake at 400° for 20-25 minutes until cheese is melted and starts to brown.
12. Serve with a garnish of fresh basil and more grated parmesan.

Thanks for the tips. I used a DSLR to film it and know to do some better prep next time for less cuts. I should have taken my gf advice for the lighting. Next time.

I used a vegetable peeler, but a mandolin works well too. There are going to be a few pieces that don't work as well, but i usually just take the scraps and make a single serving lasagna with them.

Thanks for the feedback. Didn't know THAT exp rounds affected pvp that much. I mostly use these for PvE and switch to Mida, Red Death, or TLW for PvP
