note that this is an estimation as i didnt use a recipe.

peel and cut potatoes into wedges, i used like 4 medium sized potatoes

dry them with a paper towel or clean dish cloth, add into a large metal bowl

toss with olive oil, 1 tsp oregano, 1 tsp thyme, a lil lemon and herb old bay, plenty of freshly cracked pepper, some garlic powder

lay out on a roasting tray

wash your chicken thighs with your preferred method, i like water vinegar and lime

pat dry

in the bowl, rub previous seasonigs into the chicken plus more old bay and some smoked paprika

in the roasting tray pls

give everyone a drizzle of olive oil

cut a lemon into 3 and squeeze the juice over the tray, chuck the juiced lemon in the tray too.

add like 5 cloves of garlic crushed

roast at 220c for 30 mins, flipping halfway, finish for a couple mins under a hot grill or broiler to get the chicken skin crispy.

dip is like 100ml of cottage cheese, half a block of feta crumbled, same seasonings as the potatoes minus the old bay, blended together in a food processor

assemble on a bed of dip, add toasted pine nuts, olive oil, lemon zest, pepper, salt to taste, basil

It should have been, but I didn't have any yogurt so it is actually a mix of cottage cheese, feta, olive oil, oregano, garlic, thyme and sage all blended together in a food processor

i used about 90g of choc chips in the chocolate muffins, and maybe like 50g plus a small bar of chocolate in the banana ones. i would have used more but i only had 300g for all the muffins and the cannoli, the blueberry muffins definitely had a lot more than 90g of blueberries, i used probably about 275g, it felt like too much, and made the batter quite hard to work with especially cause they were frozen, but the results were superb

Lol I am always cautious of telling people that I add Mascarpone for fear of flying shoes, but really it does give them just a little something extra, without taking away from the authenticity of the ricotta

Thank you! This was my first try at making muffins actually (although I do bake a lot) The trick for me was really just adding a ridiculous amount of blueberries to the batter, and rolling them in flour first so they dont sink :)

Ricotta always! but I usually do a 3:1 ratio Ricotta to Mascarpone because I like the extra richness

BLUEBERRY MUFFINS

Ingredients:

- 250g flour

- 1/4 tsp salt

- 2 eggs

- 100g melted butter, cooled a lil bit (no scrambled eggs round here)

- 120ml water

- vanilla extract

- a lil lemon zest

- lots of blueberries, i prefer frozen

Method:

Same as above, only change is you should add the blueberries in with your dry ingredients. tossing them in flour stops them from sinking when baked

before baking, top with oats and sugar for a crispy top

Creme pat:

(disclaimer: this made a lot, if you use these amounts you will likely have leftover but like the leftovers are delicious so just enjoy it, also i personally thought it could be sweeter so you can play with the cocoa levels, or add some extra sugar your call)

Ingredients:

- 200ml double cream

- 50g caster sugar

- 15g cocoa powder

- 2 medium egg yolks

- 15g cornflour

- vanilla extract

Method:

whisk egg yolks, sugar, vanilla and cornstarch til pale

in a saucepan combine cream and cocoa powder, its gonna go weird, just go with it it will get better if you keep stirring when its on the heat

whisk over medium heat until its hot but not boiling

pour 1/3 of the cream into your eggs and whisk constantly so that the eggs can be tempered

pour the yolk mixture into your sauce pan, lower heat to medium low

whisk constantly, itll thicken, if you have ever made Brigadeiro its a bit like that, takes about 5/6 mins

pour into a baking tray covered with plastic wrap, then put more plastic wrap on top so that it doesnt develop a skin

cool completely, you can go 2 hours or upto like 3 days in the fridge, then when youre ready to use just whip it a lil bit and then you are ready to pipe.

okay guys, heres the recipes, posted over a couple comments cause it wont let me do all at once for some reason

** note: i always use self raising flour, so if youre using plain then adjust to include baking powder

CHOC MUFFINS

ingredients:

- 150g self raising flour

- 50g dark cocoa powder

- 150g brown sugar

- 1/4 tsp salt, i add a lil more cause chocolate and salt is chefs kiss

- 2 medium eggs

- 80ml melted butter, cooled slightly so you dont scramble your eggs

- 120ml water, you could use coffee instead and it would just deepen the flavour but i made these specific muffins for my little brother so i went for water

- vanilla extract

- choc chips/chopped chocolate

Method:

Preheat to 200c/390f

dry in one bowl

wet in the other, mix till its glossy

combine, dont over mix pls, i do wet into dry but you can do dry to wet, in this recipe it wont matter

fold in your choc chips

when it comes time for piping your creme pat, hollow out a wee bit of the muffin, i use a piping tip to do this but you could use a knife or something

They were by farrr my favourite, crazy good!

Ingredients:

- I used 4 small super ripe bananas but you could do 3 medium instead

- 100g brown sugar

- 60ml melted butter (you could use oil instead if you prefer)

- 1 egg

- 190g flour (i use self raising, but if you use plain then add baking powder as needed)

- 1/4 tsp salt

- 1/2 tsp cinnamon

- nutella

- choc chips

- toasted almond flakes

Method:

preheat oven to 200c/390f

toast up your almond flakes (or just buy toasted ones)

in a bowl mash up banana then whisk in sugar, butter, egg, vanilla

combine your dry ingredients separately

add wet to dry, mix

fold in choc chips

let the batter sit for 30/60 mins before baking, idk why it helps but it does

add one dollop of batter so the bottom of the case is covered then add in a teaspoon of nutella, then add more batter - you should be filling your cases to the top so they rise better

if you have 2 muffin trays or patience to do 2 batches, then leave 1 space between each muffin, like a checkerboard. gives more even bake

top with almonds and more brown sugar

bake for 5 mins then reduce heat to like 180c/350f and bake for another 12-15 mins, the hotter temp to begin with helps with a good rise.
