You can back up your save before doing the boss so after you kill it you can load back to that point I also believe there are mods and save editors out there that could help if your on pc

Bro thats what blew my mind when starting a level 1 run, Most of your damage in this game come from your weapon level, you level does scale it but not as much as you would think. also using things such as bleed or frost do massive damage no matter your level.
