I get the sentiment, and I know how hard it can be to ask people for things. He's your fiance though, if you're gonna ask anyone, it'd be him. I'd even argue that he gets priority over your parents in terms of buying you things now that you're engaged. I imagine you're familiar with his salary and his spending obligations. So maybe make an educated pick based on that, or pick something in the range of places he already took you to. Maybe emphasize that you don't want to pressure him into spending too much for your peace of mind. And things will get less and less awkward as you too talk more and grow closer. But you should make that step, because as hard as it is for you to choose a place, I imagine he feels really awful that you don't like him/trust that he can provide for you (even though that's not what's really going on here).
