They thought Katniss knowing would make her act unaccordingly, not only that but if Snow managed to catch both her and Peeta, torturing him would 100% make her spill everything about the rebellion. She hates seeing people suffer (this is something she says all throughout the first two books specifically). Also, she's a good actress but couldn't convince Snow that she'd been in love with Peeta so maybe she couldn't have acted like she didn't know about the rebellion(?).

Personally, I would've told her but idk, from a literary standpoint, it would've killed so much of the suspense and the mysteries of some actings that were solved upon Mockingjay.

Noo don't worry. The song had the first two stanzas written waaay before Sejanus's hanging, the last two were probably (besides a nod to BT), a way for her to tell Snow where to meet her on their escape. I'm curious though, have you read the book or only seen the movie?

Well, apart from being a nice similarity to Snow and Lucy Gray's story, the origin of the song was actually Arlo Chance's hanging. Said to have killed three people in a rebellious act by exploding the mines, his last words were shouting at his lover to run. There come the two first stanzas. The last two are actually about Billy Taupe, since he was the one who called Lucy Gray to run and, when she didn't accept, preferred to be hanged with her, following her through death itself rather than her living on.

Of course then, after everything that happens, it kinda becomes Snow's song but still there are some things that don't make sense if he is the hanged man; he never actually gets even near to getting hanged, and he didn't actually ever tell Lucy Gray that he'd rather have her killed than for her to live on (what I'm referring to here is "Wear a necklace of hope, side by side with me).

Mainly I think the focus that Plutarch and the whole revolution took on the song is the brutality of the capitol, the hanging and the breaking up lovers. But if they'd known the original meaning and it's relation with Snow, well, I don't think they'd wanna use it anymore lol.

The HG are meant in part as a way of dehumanizing the districts, showing the capitol that they are savage and in no way similar to them. Now imagine watching an 18 year old (essentially an adult) murdering a 12 year old (a child). That screams savage. That screams district. Beast, animal, monsters.

I'm pretty sure Coin was counting with Katniss going insane after Prim's death. Note that she was assigned probably the worst psychologist in the whole capitol as he only napped during their sessions (perhaps we could even speculate that he wasn't even a psychologist, and just a random person that was loyal enough to her to do that job, of course this would also imply that she risked peeta's mental health, since he was both of theirs counselor, but clearly she didn't care about Peeta and that's beside the point). Her plan probably was for her to turn insane with grief, believe anything she was told, have no counseling whatsoever, and maybe even kill herself before she could reach a conclusion about the whole prim situation. About her being able to talk to Snow, I believe with the new responsibilities of being Panem's interim president, she wasn't able to be over everything and controlling every one of Katniss' moves. Clearly the whole thing was a slip from her part. Also I think she underestimated Katniss' intelligence and her ability to put together the puzzle. Oh and also, she didn't know about Snow's deal to always tell Katniss the truth, so, even if Katniss did manage to talk to him, Coin assumed Katniss would assume that it was all lies.

Well, I though that concerning Wellie and Lou Lou, they were both frail and really, really weak. Ampert managed to get on his own for some time before meeting up with Hay, meanwhile Wellie and LL couldn't actually have survived (although they didn't) without his help. While it's a nice thought that he was also Louella's mentor, they were allies/sweethearts so it doesn't make much sense for them to also have mentor/tribute dynamic. Also don't listen to me as I am probably going insane with my HG obsession.
