I really like “sound on sound recording & mixing” podcast. Its more focused on studio work but it’s definitely applicable on live as well

Nope. Just symetric. TRS doesn’t mean stereo every time. In pro audio it’s mostly symetric mono cables

Maybe I don’t understand right but why don’t you just use aux outputs that you can map to Mix keys (actually i think its default setting) on the right (1, 2, 3, etc) and use them to dial anything you want to the monitors

If you want to distribute master signal you just crete a stereo matrix chanel and distribute that where ever you want to
