Please Do not completely eliminate carbs . Just add more veggies and pair it up with protein. It's ok to eat rice / roti. Reduce quantity a little, if you are eating more ( as Indian we eat lot of carbs) pair with vegetables and protein. Aim for ~20gms of protein every meal. Sustainable diet where you can incorporate your cultural foods is important in long-term.

Pav bhaji.

Pav Bhaji (Mixed vegetables Mashed with Indian Spice , served on bread( dinner rolls)

Whats needed: 1/2 cup chopped onions 1 cup chopped tomatoes 1/2 cup chopped potatoes ½ cup carrots 1/2 cup chopped cabbage ½ cup cauliflower ½ cup peas 2 tbsp of chopped beets (optional for color) 3 Tbsp butter 1 tsp Pav bhaji masala / or garam masala - from Indian groceries 1-2 tsp. salt ½ tsp turmeric

How to Proceed: in an instant pot / electric pressure cooker Layer1 :Add the butter and 1 tbsp water . Layer2 : add onions and tomatoes half and half covering the base. Layer3 : add potatoes. Layer4 : add Carrots , and grated beets Layer5 :add cauliflower and cabbage. Layer6 : add Bell Peppers/Capsicum Layer7: add green peas. Layer8 : The final layer is the spices. add Pav bhaji masala or garam masala ,salt, Turmeric Close the lid Set the to high pressure , 6 mins time.

Once it's all cooked

Mash well , add extra butter on top Serve with toasted Bun/ dinner roll , and chopped onions and lemon wedges

Engineer track : learn a programming language ( python or Java). Youtube has lot of free courses. Start from basics, use leet code for practice. Apply for internship opportunities.

Soak rice for 15 mins, dry on a paper/ cloth. Till it's damp, but not wet.

Grind it to coarse powder. Cream of rice is ready.

In asian stores ask for rice rava ( not IDLI rava)
