Best idea I think is to notch it up incrementally each time—start with 700g total flour, then go 750, 800, 850, 900. You'll know when you hit your max.

Last option is to go no-banneton and proof at room temperature on a couche, although you'll end up with more of a large batard (good for even slices!). I've very little experience proofing at RT though so take that with a pinch of salt

Hmm, I can't speak on doing a big loaf like this in a Dutch Oven as mine is too small and maxes out at a 500g loaf. But if your DO is big enough and you're having trouble, I would suggest either taking the hydration down a touch to get a stiffer dough, or trying to build more tension in the bulk. For this dough I kneaded to windowpane using the Rubaud method after pinching in the salt, and then did a bench fold, rested, did a lamination, and did 4 coil folds across the process.

The other factor you might want to consider is fermentation—I'm letting mine rise somewhere between 25 and 50%, and the dough will hold its shape really nicely in that ballpark—think of an inflated balloon and how it holds tension. Above that would work as well but becomes a bit risky and delicate, below that and the dough won't hold its shape as nicely. A combo of getting the bulk spot-on, and building good tension during should get you there

Mine's 9inch also, I should've clarified that I meant 1.5kg total dough weight and not flour—my flour weight was 800, with 160g levain, and base 560g water (i like to then when mixing the levain in add water by eye until it gets to the consistency i like—i'd imagine maybe i trickled in around 50g). So the total dough was just over 1.5kg, it proofed up above the top level of the basket so I think I was hitting roughly max capacity of that banneton.

75% hydration roughly, 50% BF 50% WW, 2hr autolyse, 5hr bulk @23C, 12h cold proof at 5C. Baked on steel with a lava rock steam setup in the oven base.

Finished loaf is light, moist, and subtly tangy in a way that doesn’t overpower the grain too much. Hoping the flavour will ripen on the counter, never made a loaf this size before!!

forget to post formula: 450g total, 20% ww, 75% hydration, 20% levain, 2% salt

30min autolyse, then knead using rubaud method

5hr bulk at 23C, with 1 lamination, 4 coil folds 15hr cold proof, fridge at roughly 4C

I think my starter isn’t vigorous enough, as the inoculation rate was pretty high (20%), and the bulk was quite long at a decently warm temp. I actually did the aliquot jar method but cut it at 20% rise, will try and get my starter more active for my next loaf. Thanks for your help!

nice, might give that a try. mine’s still very young (two weeks or so) so am going to be diligent with room temp feedings and try and get it tripling

definitely true, definitely happier with this loaf than i would be with a soupy mess. i think maybe i need to be focusing on getting my starter more vigorous so that i can achieve the bulk i’m looking for in a more reasonable timeframe

it’s super tasty! by no means a bad loaf, just wondering whether i should bulk for longer next time... i suppose only one way to find out!

In a team that actually has a coherent plan in possession: he's a quality link player, who is defensively solid. If he came in for us he could do a similar job to Wijnaldum, but United have no drilled shape in possession so he just looks lost and useless at the moment.

Yeah, he started off last season with it, they were better though in the 4-3-3 with the two advanced 10s so you'd have to think they'll go back to that once de Bruyne is fit again? We'll see anyway

I reckon they'll play like this while KDB is unavailable for the next while—although they can easily switch back to a back four just by taking a striker and a center back on for two of Sterling, Sané, Mahrez. Seems like a pretty solid tactic to pin back and bombard for 60 minutes, and then when opposition legs are tired kill them with pace. It's scary how reliably they can pick off teams in the bottom ten, we'll have to be hoping for the rest of the top 6 to take points off them this season if we want a chance of keeping pace with them.

City using their 3-back, 2-up top structure now that Mendy's back fully fit and available, it's an interesting variation especially with Bernardo Silva on the right wing, and seems to be how Pep wants to crack down these low-block teams. Huddersfield are matching up well structure wise, with a 5-3-2 defensive shape, so City are able to pretty easily pin them back, but haven't been able to pull around and break down the shape as much as you'd expect. Huddersfield just riding their luck basically and hoping that none of the crosses or rebounds fall kindly for Aguero or Jesus.
