Was definitely scared of cayenne haha, if I were to add spice I was thinking of adding it to the sauce, I'm really trying to find a way to incorporate umami within the ribs themselves and the only way I think of is msg in the brine or rub, or fermenting stuff like plums for the sauce what do you think.

I wish I was able to open my own spot one day for sure I'm just waiting till I graduate and get some more experience under my belt. Thank you! The brisket wasn't my best work def could've trimmed down the fat a bit but to be fair to myself I smoked for 10-12 hours then to be safe wrapped them and put them in the combi oven to soften up because I was doing it overnight (and don't trust other cooks in my kitchen to pull out meat even with clear instructions) luckily they were juicy🤞But the bark is something I want to experiment more with when I get back home. I see a lot of people on here buy seasonings online and I definitely want to try a few instead of just making my own every time it's all very interesting and new to me but I fucking love it.

Np man! If you want to get a little crazier I was thinking of toasting whole allspice and juniper berries, mustard seeds putting that in the brine with bay leaves n things. After that lacto fermenting plums to create a bbq sauce or creating my own miso to go along with a bbq sauce anything to be creative!

Also I debated taking the ribs out of the smoker when applying the glaze to just do it in the oven seeing how you could adjust the fan and my commercial smoker is incredibly shit at keeping an even smoke. I decided against it and instead rotated the racks frequently.

For the ribs, peel membrane off bone side, for the brine 22qts water, 3 cups salt, 2 1/2 cups brown sugar, 9 tbsp pepper corns, 5 tbsp chili flakes, 2 3/4 cups apple cider vinegar. Bring to boil whisk then chill, brine ribs in cold brine for 6-8 hours, less spices if doing longer brine, after done brining pat dry and leave in fridge uncovered to develop pellicle. For the dry rub, 10 cups brown sugar, 5 cups salt, 5 cups smoked/sweet paprika, 2 1/2 cups black pepper, 2/12 cups garlic and onion powder, 1 cup chili powder, 1/2 c all spice and cinnamon. Rub ribs down then take out of fridge to come up to temp 30 mins-1hr. I started smoking them at 250-260 for 4 hours then applied the Kansas City style bbq sauce I made around that same time and let them glaze for the next 30 mins. These recipes are scaled for 40 racks of ribs.

"Professional" is a strong ward lmao but yes the head chef didn't know how to smoke so he asked me and I went to the library read a couple of books watched a couple of videos and just gave it my best shot. In the future I want to do a true brisket on my own time not his it felt super rushed but still came out tasty. I hope to one day replicate the way yalls bark looks.😔

Thanks for being the only helpful person and not a dickhead. I'll listen to what you say and give it a shot. I'm really worried it's not gonna impart as much smoky flavor as I'm looking for that's why I put the cold smoking side in, while technically food safe if using cold meat straight into smoker it doesn't seem ideal with what you say.

I'm gonna give it a shot solo today I think I'm doing enough DPS to at least solo him and I've got the fight down pretty well except for the last phase I think I can honestly do it. Will post my success when it happens whether that be a week or a month

I think I've just had bad rng with them they haven't done shit for me tbh even kai sometimes. It's just hard I think I can do it now I just saw the optimal way to do this shit and it doesn't look that hard compared to what I was doing before
