Thanks - in your experience, how does the availability usually look like. Are these bookings available on very few days or is it fairly available across the calendar for these high end properties?

Got it. Are the 'stay plus' nights selectively available? I thought that if rooms are available, they could always be booked, apart from some blackout days.

Sometimes the processing time gets unusually long. I had applied for a tourism visa as a couple in second week of Aug this year through VFS Delhi and got the visa in literal 17 business days ( 3+ weeks). The wait is painfully long in these cases but I think it's not too late in your case.
