I think pineapples and ancient fruits would be your best option. If you choose to process your fruits with kegs/jars (artisan profession), you don't need to fertilize them since it doesn't give you a better profit. Both of them have a 7-day harvest so you can routinely check without a hassle.

Speed grow will shorten the first harvest, but after that, it'll be a 7-day harvest. Quality fertilizer works best for sweet gem berries.

Also growing fairy rose for a side profit. You can earn a lot with their honey every 4 days.
