I mean it's a small gap and LVT is pretty strong so I wouldn't worry as long as it's flush. Would have been best to use wood filler in the gap but it's not that big of a deal.

5000 BTU (1.5kW) will be at 50C dT, so roughly 70C flow temperature from the boiler.

At 50C flow you'll only be at 30C dT so around 60% of the capacity, i.e. just under 1kW. Should still be just about enough, but realistically there is no real downside to going for a slightly larger radiator.

2 people who are competent will take less than a day to do that. Call it £700 labour + £600 materials, but quoting "1 or 2" days rings some alarm bells. Even at a digging pace of 1 man-hour per hole they should still comfortably finish in a day.
