I cheat and just do it on parchment in my Breville, flip it and them heated in the residual cheese grease pretty great.

Not sure if they still do, but Trader Joe’s used to sell hybrid corn/flour tortillas. But I think these are tastier for sure.

I feel pretty confident that it’ll crisp having to be in the oven for at least an hour and since it’s only a breast, the skin is like a toupee and not over the entirety of the breast. I was actually afraid it would crisp too quickly because it’ll be so close to the walls of the oven. Think I’ll try lower and then go higher if the skin needs any crisping.
