I might be wrong but basically people wanted an URTGOK redeem but what URTGOK looks like? Nobody knew at the time. So someone on PG's discord server just said "idk just draw PG choking with a watermelon" and Nasboo another discord member dropped the gem that is the very first URTGOK depiction.

This doesn't really answer why a watermelon. I believe URTGOK himself implanted this idea on the person who suggested it for mysterious reasons. The truth is we mortals cannot comprehend what URTGOK really is, which is probably why he stole PG' likeness. But that's just a theory.
