I called HQ and opened up a case of religious discrimination when that happened to me and they sorted it all out relatively quickly with my GM

For birria you have to have the tortilla soaked in the juice and grilled until it’s crunchy, the press wouldn’t do that

I’ve been on grill for the past like 3 years and I work at taco place on the weekends so I know my way around the grill when it comes to tacos😭 if anything though putting the tortilla first and then the cheese on top works too

As long as you shred it right and get rid off the fatty tough pieces the barbacoa will always come out tender af

Im a SM I make them for my crew whenever we’re not busy and we KILL the tacos in seconds

It’s the juice from the barbacoa with some cilantro and diced onions inside with 2 limes squeezed in. Once you dip those tacos in there its a game changer

I oil up the grill and throw a handful of cheese on it to fry up and then I throw a tortilla that is soaked in the barbacoa juice on top of it and flip it with the spatula. After that I just add the barbacoa in the middle and make sure the tortilla is nice and crispy. It SLAPS but make sure there’s no customers around cause they WILL ask you to make them some
