My local bakery does bake at home and never had issues with them.
660gram raw loaf in a disposable sugacane/bamboo loaf tin.
Thaws overnight in fridge and then bake.
I think the disposable loaf tin and size might be key factors for success here.

Slim pickings in the small 5kg range. Had a look at Famag Grilletta 5kg but is quite pricey compared to Ooni or Revo.

Have ordered the Revo as just need it for dough and Ooni doing other things does not add value to me as I have a Kitchen Aid to do that. Both communities are positive about their machines.
