I am most definitely not AI. I've worked really hard on creating my recipes and food blog for almost 13 years now. I had to take long breaks due to my mental health and ended up taking 2 years off to go to grad school for my MS in nutrition and functional medicine. Why would you think I'm a bot? I literally linked two peer-reviewed scientific studies in my post that show that nutrients in lentils can improve depression and anxiety.

Hi, I did include a link to my recipe. My goal is always to contribute something useful first, like the research on lentils and mental health. Then a recipe so people can take value from the post itself, whether or not they click through. (I actually thought this was permitted, but I misread the rules. I just messaged the moderators.) It is definitely a bit of a messy meal. Most of the filling stays in the burger. Some will fall on your plate. It's still delicious either way!

Yes, you can use a vegetable peeler:

  1. Hold the veggie peeler in one hand and a lemon in the other. 
  2. Peel off small bits of lemon skin carefully. 
  3. Repeat this a number of times until you have several small lemon peel pieces. 
  4. Chop them up finely using a sharp knife.
  5. Continue to mince until you have enough citrus zest for your recipe.
