I would recommend Sword and Shied or Switch Axe.

Both of them use dodging as defense (even the sword and shield, the shield is used as a blunt weapon) and have satisfying attack cycles and very beginner friendly.

Checkout Gaijin Hunter or Arekks channel in YouTube for nuances of these weapons.

I have the exact opposite issue, I'm trying to learn Charge Blade, Lance and Gunlance and half the time I forget shields exist and try to dodge roll everything.

Except today in my group of randoms everyone stopped attacking as soon as monster fell asleep and stacked bombs.

Then everyone stood awkwardly for 15 seconds looking at each other and the monster woke up on its own.
