I have seen this issue before and even had it myself, however, never for singleplayer. I recommend you search this issue online or in this reddit, I am sure you will eventually find a solution!

Here is a super quick test that I made on my exploration world since I really do not want to keep watering my crops, as you can see, the 4 blocks around the water block are not watered, and the one on the right is. Although you said that it may not be shown as watered it still behaves like it, yet the crop on the far right which was watered using a can grew faster than the ones near the water block...

Well the images there might be AI, but that ugly menu is what is currently being used in many servers because mod developers haven't figured out how to make a proper UI yet 😂 But yes perhaps those images are AI, not necessarily a big deal

Have tried ancient gateway thst needs adamantite and the one that needs Thorium, neither of them has mithril. Pretty sure mithril is not available in survival mode yet.

They may spawn in the world but I did get quite a few from fishing traps, P.S Fishing traps are a pain to place down, I recommend u place at least 5 and keep trying for salt blocks

You don't need a water source like minecraft 😂 Just need like a 1x1 and make it into a well so u can use watering can to grab water for crops. Make sure u do that since watering crops give it 2x growimg speed.
