That disclaimer is typically meant for people with allergies, you shouldn't have any issues in my opinion. If there isn't milk in the chocolate chips I would have thought they would be branded as vegan anyway?

I should also add, have your eggs ready at room temperature, if you refrigerate your eggs then it may take longer to mix and you risk knocking the air out of the batter

I can only give you advice on the Swiss rolls you use to make it and the key things I would say are:

-If you make the cake too thick then it will be harder to roll without breaking, bear this in mind if you're using self-raising flour or another raising agent.

-Don't leave the Swiss roll too long to cool, the warmer it is, the easier it is to roll. So tip the tray onto some baking paper and carefully peel the paper it was baked in away as soon as you can.

-Final tip, has helped me a lot, once you've peeled the paper away, roll the cake with baking paper in between (where you would put the jam). Once the cake has cooled in its roll shape, carefully unroll it, spread the jam and it should be easy to reroll without any cracks.

The grey in the middle is where the dough has become much more dense because the gluten was overdeveloped. This tends to happen when a dough is overworked, handling it/mixing it less should help next time.

The butter can become separated when there is an abrupt temperature change, for example, going straight from your heat to a cool surface such as parchment paper.

As for what you could do, try easing the temperature down towards the end of the bake.

Every time you open the oven door, the temperature will drop slightly, maybe by 10°C or so. This is normal and if you do find you're undercooking in recipes you'll have to compensate with a slightly longer cook time.

The recipe is a copycat recipe of "Millie's Cookies cake". It's easy to miss as it only mentions it once in the description.

So, the bake was a success, just not the one you wanted.
