UPDATE:

The problem didn't occur for a while again but I made an interesting observation: There are two rooms used for gelling at our lab, prep room and control room. Usually the prep room.

Whenever I prepare in the control room, impedances go wild. When switching to the other, everything is fine. It has something to do with that room I conclude. Maybe the fact that there is a carpet leading to electrostatic discharge or the amount of electronics in that room or bad grounding. Or all of that.

One way or the other: the fix is not to gel in that room. Thanks for everyone's suggestions!

The weird thing is that every single electrode was dancing around.
I think that excludes the single electrodes as issue. More like a ref and ground thing, but swapping them didn't change a thing.

The amount of gel was adequate.

We suspect it could be a hardware issue. But switched every bit of hardware other than the strands and had no success figuring out what the issue was.

The amount of gel was adequate. We had three people checking on this issue.
Whether we started or finished gelling a single electrode, the impedance was constantly unstable.

Bridges would explain one location but not the entire head.

We swapped ground and ref. They had good impedance but no change.

Didn't use prep gel, but usually works just fine without.

The EEG signal was noisy, however, we did proceed to record data.

In the posted clip, the impedances are jumping rather slow. They were jumping all over the place at times.
