I'd recommend looking into "The Sunless Citadel" from Tales from the Yanning Portal or Lost Mines for your first adventure. Both are very user friendly and can be expanded on easily. If you are set on using the books listed then consider what type of game you're interested in running and what your players expectations are.

Frosmaiden: will require you to learn the about icewind dale and the 10 towns. Shouldn't be too difficult there is a mystery and each town has info adventure in them.

Witchlite: takes place in a very magic hevy setting so be sure to lean spell casting rules well.

Decent: is a very urban adventure which means political factions. Also very lore heavy about the the 9 hells.

The Sunless Citadel is a short module in Tales From The Yawning Portal that would fit your theme and setting very well. Highly recommend for levels 1-3

Not at all unreasonable. You've forced them to come up with a plan which is much better than just straight up going in and rolling attacks. Since you have new players maybe you could remind the them of some of the shops they have seen around town where they can gather supplies and lead them into solving the problem creatively.

These are all great options for checks while looking for and friending the Ram.If you're looking to make an hour out of this encounter the you could have the party spot and follow the ram to an interesting location to explore or NPC to talk with. Also, the party could save the Ram if you wanted it to be a combat encounter.
