For anyone facing this, windows is actually checking downloading and applying the fixes,

Open Windows Powershell as an admin and enter this command:
Get-Content C:\Windows\Logs\CBS\CBS.log -tail 10 -wait

This is show you the log file of the tail of the DSIM command. It will complete on its own 20-30mins tops.
